Summer Strawberry Yogurt Pancakes
1 package Stellar Eats Pancake Mix
¼ cup Yoggu! Strawberry, plus more for topping
2 tbsp milk of choice
1 tbsp oil or melted butter
½ tsp vanilla extract (optional)
1 cup fresh strawberries, plus more for topping
2 tbsp maple syrup, plus more for topping
1 tbsp fresh lemon juice
Butter or coconut oil for cooking
Prepare your pancake mix according to the package directions, using the ¼ cup Yoggu! Strawberry + 2 tbsp milk in place of the ⅓ cup milk listed on the package. Add vanilla extract to the batter if desired and whisk until thick and smooth.
Add the strawberries and maple syrup to a small saucepan. Cook over medium heat for about 10 minutes, until strawberries are soft and jammy and the mixture has thickened slightly. Stir in the lemon juice, then remove from the heat to cool.
Heat butter or coconut oil in a large nonstick skillet over medium-low heat. Cook pancakes according to the package directions.
Serve pancakes topped with strawberry compote, a dollop of Yoggu! Strawberry and maple syrup. Enjoy!
